St Germain Sabayon with Berries
Don’t let this dessert fool you, it is as nutrient dense as they come, let me tell you how…
I love when a dessert can also be nutrient dense. Nutrient dense means that bite for bite any particular food is packed with nutrition. This recipe works in eggs and heavy cream, two foods that are packed with all the fat soluble vitamins like A, D, E, and K, that our bodies need and love. They’re the building blocks of our immune systems. Eggs are also a great source of choline. Deficiencies in choline can lead to anxiety, depression and a stress response in the body. It’s also very important when you’re pregnant or trying to conceive.
Cream is a great source of vitamin K2 - we need that to make vitamins A and D work! These are the backbone of our immune system.
I did add St Germain for a fun twist - it’s not nutrient dense, ha. But you can totally omit it and still use the same recipe and it will be great! Enjoy
St Germain Sabayon with Berries

- In a large heatproof bowl set over a pot of simmering water, whisk the egg yolks with the sugar and the liqueur over moderate heat until it turns thick and pale. This will take some muscle power and about 8-10 mins.
- Insert a thermometer in - it should read 155'
- Remove from the heat and let cool
- Make whip cream. In a large mixing bowl add cream and whip until firm. You can use a mixer or do it with your hands.
- Fold the whipped cream into the sabayon mixture and let sit in the fridge for at least an hour to set.
- When ready to serve, spoon layers of the sabayon and berries
- Note: you can omit the St Germain if you don't want any alcohol and this recipe will still work perfectly without it.
