Roasted Beets and Peaches over Goat Cheese

 

This recipe is so simple yet so good! It’s a perfect Summer appetizer and allows you to use up the best of what Summer has to offer. Side note, If you are in a hurry, don’t worry about roasting your own beets. Buy the prepackaged, pre cooked ones. I love the Love Beets brand and you can find them at most grocery stores. Whole Foods always carries them. Also, if you want a more protein packed app; instead of using goat cheese, opt to use cottage cheese. Simple strain it and place the strained cheese in a blender to make it smooth. Use that in place of the goat cheese. Enjoy!

Roasted Beets and Peaches over Goat Cheese

Ingredients

Instructions

  1. Roast beets then chop into bite size pieces. You want one cup total
  2. Toss the beets in 2 tsp balsamic vinegar
  3. Chop your peach into bite size pieces (keep separate from beets till serving so they won't turn red)
  4. Spread goat cheese on a serving dish, then add beets
  5. Add peaches on top
  6. sprinkle with fresh basil and thyme and drizzle with raw honey

Notes

To save time on roasting beets, use store bought, pre roasted beets
