Superfood Chili
When we were kids, and the weather got cold, we’d have chili Fritos and they were always served in single serving bags, cut on the side and the chili was served in the bag! I thought it was pretty cool to eat out of a chip bag! I still do … but want a healthier chip situation now
Here’s my take on powering up your chili with some anti inflammatories … swipe left for the recipe
Cacao … full of magnesium and potassium … choose cacao and not coco for max antioxidants
Om mushroom powder. I work this stuff into as many dishes as a can. Mushrooms are a powerful immune booster, antioxidant and nervous system modulator
Ceylon cinnamon … more potent than the regular cinnamon you find on most grocery stores, which is cassia. This stuff can help balance blood sugar levels for up
To 24hrs!
Coffee.. I like to add about 2 tbs of brewed coffee for a deeper flavor and for more antioxidants
For fun, serve in a plantain chip bag and top with all your favorites! I like plain yogurt (probiotics), raw cheddar, sauerkraut (more probiotics), and some avocado
Superfood Chili

Instructions
- Melt coconut oil in a large pot over medium heat
- Once hot, stir in chopped jalapeño, onion and bell peppers and cook until tender - about 5-10 mins
- Stir in garlic and cook until fragrent
- Stir in ground beef and ground sausage and cook until meat is browned, about 10-12 mins
- Stir in chili powder, cumin, oregano, taco seasoning, crushed tomatoes, mushroom powder, coffee, cacao, salt and pepper
- Reduce heat and let cook for at least 30 mins for the flavors to meld - I like to cook mine on low heat for at least an hour
- To Serve - Plantain chips, grated raw cheddar, chopped tomatoes, chopped green onions, plain yogurt or sour cream, chopped lettuce, chopped avocado, Sauerkraut, toasted pumpkin seeds, limes, cilantro
