Skinny Jeans Eggnog
The festive Christmas drink that has all the feels without the drama (sugar)
I love the idea of a Christmas cocktail that is also highly nutritious and not full of sugar. Enter the skinny jeans eggnog.
The base of this cocktail is loaded with lots of fat soluble vitamins that will keep your immune system up this Winter. Using the best possible ingredients and swapping out the sugar for monk fruit sugar, means no guilt. Because this drink is made with egg yokes and heavy whipping cream, you get a big shot of fat vitamins like A, D, E, and K. These are the backbone of your immune system and hormones. So it’s basically vitamins in a glass!

- Whisk the egg yolks and monk fruit sugar together until light and creamy
- Combine the heavy whipping cream, milk, salt, and nutmeg in a saucepan over medium heat and stir until the mixture starts to slowly simmer.
- Combine the egg mixture with the warm milk - do this by first adding a tablespoon of the hot milk mixture to the eggs and whisk vigorously - repeat until all the milk mixture is combined - this will keep the eggs from cooking with the warm milk
- Return the combined liquid to the saucepan and simmer on low heat
- Continue to whisk until the mixture becomes slightly thicker (about 2 mins)
- Remove from heat and add the vanilla extract
- Let cool and come to room temperature, then place in the fridge to chill
- Serve with grated nutmeg and a cinnamon stick
- If you like, add a shot of your favorite bourbon
- Will last about a week in the fridge and can also be frozen
