Watermelon Basil Smash

 

I don’t tend to drink too many cocktails because of the sugar - it’s hard on my stomach and I just don’t want it very often. However, in the summer, when I want a fun cocktail, I make a simple syrup with monk fruit sweetener. It offers all the same sweetness but has 0 net calories, is keto and paleo friendly, and won’t wreck your blood sugar levels like regular sugar will. It’s also a 1:1 ratio swap with real sugar, so that makes swapping it in recipes super easy! This is my take on a watermelon cocktail!

Ingredients

Instructions

  1. First make the simple syrup - mix equal parts monkfruit to water (I used one cup of each)
  2. Place in a small pot and gently heat untill the sugar is completely dissolved
  3. Once done, place to the side to cool
  4. Next place the watermelon, basil and cucumber in a cup and muddle to render thier juices (we want the juice but not the pulp)
  5. Drain that juice into a shaker, then add the vodka, St. Germain, lemon juice, and simple syrup
  6. Shake to combine then pour into your serving glass and top with ice.
  7. Use the remaining watermelon and basil to top your cocktail
  8. Enjoy outside with good friends and music
