Blueberry + Beet Power Salad

 

Inflammation is at the root of most diseases, so foods that fight inflammation are a no-brainer when it comes to protecting your health in the future. 

This one is a power puncher when it comes to liver detox, cleansing your blood, fighting inflammation, and protecting against cancer. 

Every single ingredient is perfectly designed by Mother Nature to detox and heal you, and I think that's so cool! 

Let's break it down:

  • Beets help to purify the blood and are powerful in liver detoxification. Both are important for skin and hormonal health. They also help stimulate the flow of bile, which helps you digest your fats properly. When you digest your fats better - you're able to take in more vitamins from your food.

  • Blueberries are packed with phytochemicals and flavonoids, in particular, quercetin. I probably need to do a whole series just on quercetin - but in short, every single food we tout as "super" is super because of quercetin. Quercetin is what gives food its deep color and acts as an antioxidant that fights inflammation, and blueberries are at the top of the list. In addition, quercetin has been shown to help improve cholesterol levels, heart disease, viral infections, cancer, allergies, cognitive issues, and diabetes.

  • Broccoli sprouts help detox the liver and are one of the best things to add to your diet to fight cancer. In addition, because of their detoxing properties, they are a great way to help balance estrogen in the body.

As you can see, eating this salad once a week can basically solve all the world's problems! Ha - but at least it's a big step in the right direction!

Blueberry and Beet Power Salad

Ingredients

Instructions

  1. Preheat oven to 425*
  2. On a small baking sheet, toss the beets with the skin still on in avocado oil and a small sprinkle of salt
  3. Once the oven is heated, place the beets in the oven and roast until they are fork tender. This depends on your beet size - but should roast for about 35-35 mins
  4. Once cooked, pull the beets out and let them rest at room temp util you can peel them.
  5. Peel beets then chop into small 1/2 inch cubes
  6. Place in a bowl with the blueberries, micro greens and lemon or orange juice - I like to do an equal mixture of both orange and lemon juice
  7. Toss together and serve
