Roasted Beets and Peaches over Goat Cheese

This recipe is so simple yet so good! It’s a perfect Summer appetizer and allows you to use up the best of what Summer has to offer. Side note, If you are in a hurry, don’t worry about roasting your own beets. Buy the prepackaged, pre cooked ones. I love the Love Beets brand and you can find them at most grocery stores. Whole Foods always carries them. Also, if you want a more protein packed app; instead of using goat cheese, opt to use cottage cheese. Simple strain it and place the strained cheese in a blender to make it smooth. Use that in place of the goat cheese. Enjoy!
